MY 2020 CHRISTMAS LETTER

MERRY CHRISTMAS!!!

1 Peter 1:3-9 says,

"Blessed be the God and Father of our Lord Jesus Christ! According to his great mercy, he has caused us to be born again to a living hope through the resurrection of Jesus Christ from the dead, to an inheritance that is imperishable, undefiled, and unfading, kept in heaven for you, who by God's power are being guarded through faith for a salvation ready to be revealed in the last time. In this you rejoice, though now for a little while, if necessary, you have been grieved by various trials, so that the tested genuineness of your faith - more precious than gold that perishes though it is tested by fire - may be found to result in praise and glory and honor at the revelation of Jesus Christ. Though you have not seen him, you love him, though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory, obtaining the outcome of your faith, the salvation of your souls."

It may seem silly to start a letter with long scripture. (Let's be honest, most of us skim the boring parts of a Christmas letter to look at photos and find out the fun things a person has done that year. ha! You know it's true!) This scripture though is so applicably accurate to my life. I found hope in God in some of the hardest of circumstances. Even this year in the different things I have struggled with, I have found joy-filled hope. I've been given this freedom and joy that I can't explain. It's remarkable to look back this year and the past 8 years and see how far I've come.

Every year I've grown and to this day I wouldn't change one thing that I've gone through. My attitude, the positivity, is something I've gained through the hard. If you took away the hard I don't know if I'd have a positive attitude. Perspective matters and I have found a great one!

I know that 2020 has been hard. So many people have experienced trauma, heartache, sickness, death of a loved one, job loss, experienced violence, dealt with cruelty among humans, and most people are ready for 2020 to be over and for 2021 to start. "Let's get ride of this year and move on," they say. But if you look back people say that every year. People hope the next year will be better because they're focused on all the bad from the past year. Perspective does matter folks! We can always find something to grumble about. It can take work to find something to be grateful for. 

I have so much to be thankful for!

This year, I feel like my health is the best it's ever been since being poisoned. Although I have made so many choices to better my health, I have to give credit to God for helping me through! I never asked to have health issues. But having these health issues has given me my positive attitude and that I thank God for!

Whether you know me well or not, may you find hope and joy, may you find it in God and may  your eyes be opened to the blessings you have been given. Perspective matters folks. There is always something good out of the hard.

SO... what did my 2020 look like?! I had a great year! Pretty much just like this photo, beautiful!


This year I...

Started my own cleaning business and it has done so well I'm booked and have a waiting list! I love what I do!


Baked homemade bread and sweets as usual. For family or friends the oven stayed warm.



Watched the sunrises and sunsets.



Hung out with Emma and Asa. Auntie life is great!





Went kayaking a lot!





Some of my KC friends came to visit this summer which was so fun!



I got a Lab puppy this spring. Bella is 8 months old now! 



I gardened.  Veggies did great this year!
Newest addition are raspberry and blackberry bushes, pear trees, and asparagus!



Went Beaver and Deer hunting. Get em too!


Road tripped around SD with friends because you know I don't travel alone, haha!



Lastly, I sold many books after having my book come out last fall. Advertising companies have continued to call my cell phone every week in regards to this book. I never wanted to be famous. I wrote this as part of my grieving process because I didn't want to forget the good things amidst my hard circumstances. As I've said before, I am not keeping a dime of the proceeds. I have and am giving it all away. I know some people can make writing a living, but for this book I simply have chosen to give it away to help others. 


Life is full of blessings and I believe I have been given one of the best with the best perspective!

May you all find hope and joy in God.

May you look back at 2020 with a positive view.

May you find the good amidst the hard of 2020.

LET'S TALK COVID-19






As a person who has traveled to many doctors and many specialists over the last 8 years, I see medical things different now-a-days. Doctors and scientist are needed. If you look at all the ways medicine has excelled in the past 100 years, us, as patients do receive better care. That care is all due to research, trial by error, and trial by win. 

So today I thought I’d give you some food for thought. Give some insight from someone who isn’t medically trained but has been around enough to know things.

I was poisoned 8 years ago and have gone to many MANY doctors. And while they were all so very well trained and willing to try to help me. Some of my ailments never received a diagnosis. Some of my organs still don’t work right. And let’s just chat a second about Migraines.

Doctors are still learning about the brain and triggers to migraines. Some of us have tried everything but we still struggle with migraines. Even if you do everything the doctor says (eat healthy, exercise, take this medicine, do this or do that), nothing seems to keep us totally FREE from migraines. Thankfully I only struggle a few times a month instead of every day. When I get migraines now, I feel blessed. Sometimes annoyed but always blessed. Because having my head hurt that bad and be in that much pain causes me to rely on God and when I'm at my weakest, he is strong! 

It is funny how we as people simply want a diagnosis along with a curable medicine. Me included. But if we look back at history, sometimes there isn’t always diagnosable answers or medicine that “fixes” the issue. 

So, when it comes to a new disease like Covid-19 of course we are going to look to the doctor who are well trained, who do research, and who want to help us. But we have to keep in mind, doctors don’t always know everything and when it comes to new illnesses, they are just trying to make suggestions that will help us. Keep in mind that sometimes those suggestions don’t fix the issue or make it go away. 

I’ve seen so many opinionated people when it comes to Covid-19. Especially on social media. 
And really, I’m not trying to make this about opinions. I’m actually just trying to give you honest both sided facts.

As I’ve already stated I have experienced many doctors ideas and treatments and there are always pros and cons to doing a treatment or taking a medication. 

Let’s get started with the pros and cons of Covid-19.

Masks CAN help us. If you disagree give me a chance to explain. As a farm kid I've grown up covering my face. Country living causes us to cover our faces quite a bit. If your scooping grain, especially in a grain bin, you know that wearing a mask helps prevent you from getting all that dust in your nose and lungs. In our South Dakota winters with blizzards and negative degree windchill we are used to covering our faces with scarfs. Cattle drives in the dry summer heat will cause you to at least hold your breath from the dust, especially if you're in the rear. There is a reason that dentists and hygienists wear masks. There is also a reason why doctors and nurses in critical care units, surgery, and more wear masks to protect us and them from spreading germs.

So yes, masks can help dear reader.

The CDC has told us that masks can help protect us from the virus…BUT they never have said what the side effects are from wearing a mask all day. (If you know anything about doctor visits, there is always, ALWAYS side effects to what the doctor tells you to do.) What are the side effects from wearing a mask? No one seems to talk about that.

There is this unspoken law that if we wear masks, we won’t get Covid-19. The CDC never ever said that. They said it can help protect us. If you do the research, wearing a mask was only suggested to not over-run the hospitals. They also said it can help protect us but they never said we won’t get Covid-19.

If Covid-19 is as contagious as the doctors say, then won’t we ALL get Covid-19?

Do the research: Did you know that the vaccine that will come out first has aborted fetuses in it? If your pro-life but are waiting for a Covid-19 vaccine, what are you going to do? 

What about Covid-19 in 3rd world countries? Do you really think people in Haiti and Africa have money for masks? America is so concerned about what the news is telling us about Covid-19 death rates that we aren't even hearing about death rates in 3rd world countries. Don't those people matter too? Are they dying? Are we even doing anything to help them?

Is Social Distancing really beneficial? I understand that it's helping protect us from the virus. But what about domestic abuse, sex trafficking (thats still going on), suicide, and all the elderly people that aren't dying from Covid-19 but from lack of people. Do the pro's of social distancing outweigh the cons?

What about death? Ya'll might think I'm going crazy religious on you, but deep deep down the fear of Covid-19 isn't getting someone else sick, its you yourself dying or you yourself causing someone else to die. If you are honest to God, it comes down to death. Raise your hand if you want to die? Uh, like nobody does! But if you believe in God you should have NO FEAR in death. Doesn't mean believers don't want to die. Simply means that as believers there is no fear in death. If we die, we know where we are going. DO YOU? That doesn't mean as believers we act stupidly, we need to be smart. But isn't it ok if you're a believer and want to wear a mask? Isn't it ok if you're a believer and choose not to?

Why now? Why do you care about spreading germs now? Last year when people were going about their day no one ever thought about spreading germs. Last fall as I came into contact (in public places) with people who had fevers, Influenza, and the common cold. No one ever felt bad about spreading germs till now. Seems silly to have a new disease cause people to NOW be conscientious. Maybe because I've struggle with a low immune system since my poisoning that I don't think about changing my habits. Besides wearing a mask I have lived the last 8 years by: wash your hands, sanitize, and staying home when sick. Why had we become so stupid that we needed a newer deadlier virus to remind us to stay home when sick and to wash our hands? Why now do we feel bad when people die of the flu? Honestly that is what Covid-19 is: A new virus but it is the flu.

I do believe Covid-19 IS serious. I question though whats happened to Influenza. I haven't heard of anyone getting Influenza since Covid-19 happened. Why?

This brings me to another thought…opinions.

Why are we on social media bickering about wearing a mask or not? Instead of letting others think for themselves and their own convictions, why are we trying to push our thoughts on someone else? Do we think that we are better than them? That we know better than them? Honestly dear reader, due to this being a new virus even doctors are debating the issues of Covid-19. 

I do think that if a business required it, then you should follow the rules. But to shame people for not wearing a mask. How is that helpful to society? I've been surrounded by people who are wearing masks but also coughing. I don't feel safe by that. Do you?

Here’s another food for thought. I have SO many allergies. And all of them affect my breathing first. For me, wearing a mask is actually worse. And according to the CDC, mask wearing is only encouraged if you don’t have trouble breathing. So, as people have sat or stood 6 feet away judging me for not wearing a mask. Did you ever think that I also am following the CDC guideline by not wearing a mask because I have breathing problems? 

What about the people that disagree? Can’t you still try to be careful and not wear a mask? If wearing a mask helps you feel like you're protecting yourself and others, GREAT! Really, no shame from me. But if others disagree when it comes to wearing a mask, aren’t they entitled to choose for themselves not to? No shame from me either. 

I don’t remember reading from the CDC that you HAVE to wear a mask. I do think we should abide by the governing authorities as long as it doesn’t go against the Bible. If your governor says wear a mask, shouldn’t we? (I personally am thankful to live in SD where my governor lets the people decide. But if I still lived in Kansas City l I would abide by the governor’s rules whether I personally agree or disagree.) 

WHY abide? Let’s read us some Bible…

Romans 13:1-2 says, “Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God. Therefore whoever resists the authorities resists what God has appointed and those who resist will incur judgement.” 

So shouldn't we obey the government that God has put over us?

Should we shame and guilt each other who have different opinions?

Romans 14:1 says, “As for the one who is weak in the faith, welcome him, but not to quarrel over opinions.”

Are our opinions so great that we feel the need to shame others for thinking differently?

What about causing someone to stumble?

Romans 14:13 says, “Therefore let us not pass judgment on one another any longer, but rather decide never to put a stumbling block or hindrance in the way of a brother.”

My brother mentioned this verse a few months back in one of his sermons and he is right. What if loving your neighbor means putting a mask on? My niece is 2 years old and a type 1 diabetic, although I have trouble breathing, I will wear a mask while traveling to visit her, to protect her little body. What if loving your neighbor means taking a mask off? When I personally dealt with trauma in 2013, I would have hated to sit in counseling sessions talking behind a mask while talking to my counselor behind her mask. 

Perspective does matter. 

Covid-19 is full of unknowns and I think that does scare people. 

Since I don’t wear a mask often. (I think I’ve only worn a mast 5 times.) Should I feel shamed if I spread the virus? Should people make me feel bad for not wearing a mask? If I’m doing everything my doctors and the CDC doctors have told me to do, then no. I shouldn’t feel shamed if I spread the virus. I shouldn’t allow people to make me feel shameful.

I am doing everything in my power to keep myself and others healthy. Shouldn’t we all? And maybe, just maybe dear reader, that looks different for different people who have different reasons behind why they do what they do. 

Let’s think before we act and speak.

Let’s remember that there are always two sides to a story.

Let’s remember the facts and not get carried away by opinions.

Let’s remember that if Covid-19 does cause sickness and death, Jesus is still more powerful than any disease. We need to be smart, careful, and watchful of germs. But remember, that looks different for each person. Show grace to someone that thinks differently. 

God is always good, even in the face of a new disease.

ALLERGIES AND INFORMATION

 Hi friends,

Today let's chat about allergies.

As many of you probably already know I have a ton of allergies from seasonal to foods. 

I thought I'd hand out some information that I've received from specialists. 

Most people aren't like me and had doctor appointments everyday for 2 years. And really you don't want to if you can help it. 😜 As you can imagine I've seen and tried lots of things to help the allergy problem.

For me when it comes to food allergies I end up with breathing problems and gut problems. Which we aren't going to talk about today, but thought I'd mention if you're curious.

When it comes to seasonal allergies, (which I have issues with every season), my main issue is breathing.

The things that I struggle with most for the seasonal allergies are pollens, molds, dust, and smoke. When I'm around any of that I struggle to breathe. Like most people with seasonal allergies. Congestion issues come as a result of breathing in the allergens.

First off, going to an allergist is really really important. They can help you find your specific allergies. I go to a allergy specialist in Wisconsin and they have been helping me. My allergist does drops under the tongue instead of shots. So it really is up to you what you like. But this place is great if your interested! At least go to Allergy Associates of La Crosse website and check it out.



Next let's talk about over the counter meds. 

If you have allergies many of these things are probably familiar. Honestly, these are all top choice from any allergist. The best one that suits me is Benadryl. Many people don't like Benadryl for the drowsy feeling. But for my I take a low enough dose it helps me when I'm congested. Usually my congestion occurs before bed and so the drowsy feeling doesn't matter since I'm sleeping anyways.


With allergy meds comes sinus issues. But these two over the counter sinus products are great!

NeilMed sinus rinse is AMAZING! Once you get over the weird feeling of squirting something up your nose, it will really be beneficial to you life in allergies. Use in the morning, at bedtime or both! It will really make a difference. I usually use in the morning. If my allergies are bad or even if I have a head cold using this in the morning and at bedtime will really help. 

Random fact: In the world of Covid, Influenza, and the common cold... did you know that viruses float to your nose or mouth and that's where the bacteria grows into flu symptoms. (At least that's what my doctors have told me.) 


Flonase has become a wonderful friend as I deal with my allergies. Using once a day or twice a day for a few days if I'm really bothered. This does help clear your sinuses.



Now let's talk about essential oils! I love essential oils! But if you're not into the oils just hear me out. If at all you're willing to hear and try CBD oil...please listen. Because your little bottle of CBD oil IS an essential oil. 😃 So listen up folk as we dive into essential oils.

I use DoTERRA essential oils brand so I only share experience from this brand. I'm not against other brands just saying that this one has helped me! 

FRANKINCENSE is awesome. It's the king of oils. This guy right here helps my allergies. Put a few drops behind my ears/neck area, putting a drop under my tongue and drinking a glass of water, or putting it on my feet. It helps in the long run even if I don't see the results right away.


TriEase is a gel cap full of 3 essential oils: Lavender, Lemon, and Peppermint. These three oils really do help one's allergies. I personally take 2 gel caps whenever I notice my allergies getting bad and they work better than Claritin or Allegra any day!


Having trouble breathing during allergy season? Try these essential oil cough drops!



Like I mentioned earlier bedtime is many times my worst part of the day. So making sure I breathe well before I fall asleep is important. Insert an essential oil diffuser. I personally am so stuffed up sometimes that I put in more oils than most probably would. But when I'm congested I filled the diffuser with water and add 8-10 drops each of Peppermint and Eucalyptus. IT REALLY DOES HELP!
 

Lastly lets talk about breathing exercises. Taking deep breaths is SO important! There are lots of techniques. But one I use before bed or even during the day is this one. 

Take a deep breath through your nose. 

Hold 5 seconds. 

Let out through your mouth.

 Hold 5 seconds. 

Repeat.

Like I mentioned before I had tried lots of things and these have been the long lasting techniques that are worth your time and money!

 GLUTEN FREE


Hi everyone! 

I thought I'd make a short informative chat about gluten free products that I've found and like.

Being GF (gluten free) is probably one of the hardest things because we want our food to taste "normal". When GF first came about many things that were GF tasted terrible. They have immensely improved but not everything is great.

I myself am a GF snob. Meaning that I want my GF food to taste as "wheat-like and glutinous" as possible.  

So if you find this at all interesting and helpful keep reading because I do have photos and explanations that will be beneficial for the GF world.

Everyone has their reasons to be GF. 

Mine, well are due to allergies. 

I'm allergic to corn, gluten, and mold foods (yeast, alcohol, mushrooms). So my list of foods I recommend won't have those ingredients or will have minor of those ingredients.  

So let's get started!

FLOUR:

 #1 flour that I've found is Bob's Red Mill 1 to 1 Baking Flour. No need to add xanthum gum. No need to do anything different with your regular chocolate chip cookie recipe or cake recipe. No need to find a GF recipe. Just follow your favorite recipe and add this flour instead of wheat flour. BEST FLOUR EVER! 


#2 flour would be Betty Crocker's GF all purpose flour. Follow her recipes and they all taste SO good! Anything from Berry Crocker that's GF has actually been wonderful and has that "normal" taste.

#3 flour would be Pillsbury. This is new to the GF world and is similar to Betty Crocker. Pillsbury and Betty Crocker are just more expensive than Bob's Red Mill hence why I put Bob's first. Because we all know GF is EXPENSIVE so get whats best for you and your finances!


BREAKFAST:

My top two pancake and waffle GF mixes are Pamela's and Betty Crocker's GF Bisquick. Pamela's has a difference taste and somewhat different texture, but keep an open mind because it is my favorite and #1 go to for breakfast. And since I can't do breads with yeast I make pancakes and use them as bread slices for sandwiches. GF Bisquick is totally your "normal" taste and texture if you're not up to try Pamela's. 



BAKING MIXES:

There are lots of pre-made box mixes for GF just like they have for gluton cakes and cookies. So these are my favorites. I personally love to bake from scratch. But every once in awhile having a box mix on hand can be very convenient. 

Namaste Spice cake is probably my favorite mix to make carrot cake with. YUM!
Krusteaz brownie mix is my top GF brownie mix!

The Aldi chain grocery store has THE BEST gluten free options. But sometimes GF food mixes need a little extra. This is the best cake box that I've found, but this cake always seems to end up having a cornbread texture. Simple fix...add an instant pudding mix to it and the cornbread texture goes away!


This is the best ANGEL FOOD CAKE mix that I have found. It also is sold at Aldi.

PASTA:

Aldi wins again. These two GF pastas are my go to!


BREADS:

Since I can't do yeast the only brand that I've found that works great and taste great is Chebe. They are yeast free. If you can get over the gummy like texture due to the tapioca flour you will love these like I do. Pizza crust, rolls, and cinnamon rolls have all been tried and liked by me. 



COOKIES AND CRACKERS:

Not much need to explain but these snacks are the best of the best when it comes to GF.

Craving Oreos? THESE ARE THE BEST GF OREOS!



Need some vanilla wafers to go with your pudding?! Kinnikinnick is the only brand that I've found that has vanilla wafers that tastes "normal."


Anything Blue Diamond that I've found is GF. And they are so so good in the cracker world!


Can't do corn like me? Try Beanitos. A bean chip that tastes very very similar to corn chips.


The equivalent to Ritz crackers, Lance crackers are the best. YUM! I also recommend anything from Lance that is GF.


Need a healthy GF granola bar option that tastes good. Try Kind bars.

I hope this list has helped you in your GF journey for yourself or for a friend. It's always helpful to find someone that has experienced the highs and lows of the GF world. I hope this helps you find the highs so you don't have to waste your time with the lows.
